Healthy Delicious Banana Oatmeal Pikelets

If you want a healthier, more wholesome version of a traditional banana pikelet, this is the recipe for you. You can even add a scoop of protein powder to make this a protein packed banana pikelet! I like to make a big batch and then have them for breakfast, morning tea or on the go. They only take a few seconds to heat up in the microwave.
Ingredients:
3 medium overripe bananas (peeled)
2 tsp baking powder
1 tsp vanilla essence
2 eggs
1 cup of milk
1.5 cups of rolled oats
Pinch of salt
Cooking oil
Extra banana slices (optional)
Greek yogurt (optional)
Method:
1) Grab a large bowl, mash the overripe bananas.
2) Add eggs, flour, rolled oats, salt, vanilla essence and milk.
3) Mix well thoroughly together into a smooth batter.
4) Grab a tablespoon and scoop a spoonful of batter into the hot oil. Fry till golden on both sides. Take care not to burn the pikelets.
5) I serve it with extra banana slices and dollop of Greek yogurt.
