Vegetable Soup
Ingredients

1 onion diced
2 carrots diced
2 garlic cloves sliced
2 stalks of celery diced
4 cups vegetable stock
1 bay leaf
1/2 teaspoon oregano (optional)
Salt and pepper to taste

Instructions

Fry onion and garlic until soft, add carrots and celery and fry until tender. Add stock, oregano and bay leaf and season with salt and pepper.

Simmer for 30 minutes or until vegetables are cooked.

Remove bay leaf and serve with crusty bread.

You can add any vegetables you like and for meat lovers add shredded chicken.
