Belgian Slow Cooked Beef

2 pounds beef chuck cut into cubes
2 tablespoons olive oil
1 large onion chopped
3 cloves garlic minced
4 carrots sliced
2 potatoes diced
2 cups beef broth
1 cup Belgian ale
2 tablespoons tomato paste
2 teaspoons thyme
1 teaspoon rosemary
Salt and pepper

In a slow cooker, combine the beef, onion and garlic, carrots, potatoes.
In a separate bowl, mix together the beef broth, Belgian ale, tomato paste, thyme, rosemary, salt, and pepper. Pour this mixture over the beef and vegetables.
Cover and cook on low for 8 hours.
If the sauce needs thickening, use some Cornflour
