Indian Style Haka noodle

Hi someone suggested me to post the Haka receipt. Here you go!

Hakka vege noodle ingredients:
- 450 g hakka noodles
- Vegetables
- 2 cloves garlic (approx. 1½ tablespoon)
- 1 cup cabbage
- ½ white onion (approx. 1 cup)
- ½ red bell pepper (approx. 1 cup)
- Hakka Noodles Sauce
- ¼ cup dark soy sauce (or regular soy sauce)
- 2 tablespoons oyster sauce
- 2 teaspoons white vinegar
- 1 tablespoon oil
- ½ cup water
- 1½ tablespoon ketchup
Garnish (Optional): 1-2 stalks green onions (finely chopped)

Prepare the Noodles
1. In a large bowl, soak 450 g hakka noodles in boiling water for 5 minutes.
2. Drain the noodles with cold water to wash the starch from the noodle. Set them aside for later.
Prepare the Vegetables and the Hakka Noodle Sauce
a. In a small bowl, combine the ¼ cup dark soy sauce, 2 teaspoons white vinegar, 2 tablespoons oyster sauce, 1 tablespoon oil, 1½ tablespoon ketchup, and ½ cup water and set it aside.
b. Finely mince 1-2 stalks green onions and set it aside as a garnish for later.
c. Finely chop or grate 2 cloves garlic and set it aside.
d. Thinly slice ½ red bell pepper, 1 cup cabbage, and ½ white onion and set it aside.
e. You can also make three scramble eggs to be mixed with the noodle at the end.
Stir-Fry the Vegetables with the Noodles
a. Set a large frying pan or wok on the stove and set the stove to medium-high heat.
b. Add in the onions and stir fry it for 2-3 minutes or until they are soft.
c. Add in the garlic and stir fry it for 30 seconds.
d. Add in the bell peppers, and cabbage and stir fry it for 2-3 minutes until they are soft.
e. Add in the noodles and the sauce and mix everything together until the noodles have absorbed the sauce. Cook it until the noodles are soft.
f. (add another ¼ cup of water if noodles still feel dry, or you want it saucier)
g. Plate it and garnish it with green onions.
h. Enjoy!

For those who are meat lover, you can add some small sliced chicken but need to be stir fries the chicken first. Wash and add some salt, oil and corn starch and mixed it before stir fries them. Same thing with shrimp if you need to add some shrimp on it.

          • Why hot? I never mentioned putting chilli sauce or hot pepper. If you want to make the noodle a little yummy, you can fries them a little after boiling them. It will taste much better and crispy.

                • Looks lovely ,not many know a touch of ketchup is good in Asian noodles .. my Malaysian boss used to do this too.

                  • I never heard of putting ketchup on a fries noodle, but again it depends on people preference. Like I went to lunch with my church member and went to Burma restaurent. She said they have great food. It is ok, something different and I noticed Burma food, they food slice peanut on every dishes. Maybe that what make my friend say it is good food. Haka food is actually very famous in the Indian community in Toronto, Canada.

                    Ahh interesting ,, yes the Malaysian noodles we used to make had some curry powder , ketchup and soy in them from memory:)

                                        From what I can gather, Hokkein noodles are made with rice and or egg and Hakka are made with wheat.

                                        Flour is made from wheat. Sorry for not being more specific.

                                      • Let me give you some history. Haka is a branch of Chinese from China. Very small population. In the olden time when China was very corrupted, many Chinese from Canton area migrate to India as India is the next closet countr and they settle in Kolkatta. There are quite a lot of Chinese in Kolkatta. They called themselves Hakka Chinese like myself. As the time goes, they started to set up Haka restaurent in India and many Indian loves Chinese food especially Chilli chicken or chilli fish since it is being blend with spices and Indian people like spices, Haka food is quite popular in India. Even now in Toronto, Canada, there are many Haka restaurent and most of the customer are Indian. Yes, Haka people are a minority in China. Just like in India, we have Hindu, Muslim, Sikh, Gujurati and etc. Same with Haka people. We speak Haka dialect but basically practice the same culture and norm like Chinese New year and etc.
