One Pot Winter Hearty Soup

This recipe is hearty, warming and packed with flavors. It is loaded with healthy good ingredients and is perfect for the cold season. It can be enjoyed for lunch or dinner. Your family is going to love this recipe.
Ingredients:
1 bacon or ham hock
1 large onion
2 packs of 375g soup mix (use 1 pack if you are making a small pot only)
3 medium carrots
4 celery stalks
24 brussel sprouts
Salt and pepper
6 -8 cups of water
Method:
1) Boil bacon hock with 8 cups of water in a large pot. The bacon hock needs to be completely covered by water. I boil it for 3-4 hours. Bring it to boil and then simmer till the bacon meat fall away from the bones.
2) Add soup mix. Cut onion, carrots, celery and brussel sprouts into bite sized pieces. Then add them all into the pot. It takes about 1- 1.5 hours for all the ingredients to be cooked thoroughly. Add salt and pepper to taste.
3) Once the bacon hock is completely cooked, I then shred the meat, then add it back into the pot.
4) Bread rolls go really great with this pot of soup. Enjoy!
