Cheese Cake

1 cup caster sugar
1 egg
3 pkts Philly cheese
1 teaspoon vanilla
1 pkt Nice biscuits
Butter

Crumb biscuits, melt butter and mix through biscuits to make soft base. Add mixed spice. Put in tin and refrigerate for 1 hour.
Mix egg, sugar, vanilla, and Philly cheese together. Place in the tin and bake for 20 minutes in a fan-forced oven at 200°C. Remove and cool.
Put on a plate, top with thickened cream and fruit or whatever you like. My granddaughter likes grated chocolate.

  • Hey I remember that recipe yum as a variation add some lemon zest in with the philly egg sugar mix or orange zest gives it a little zing! isnt there also a no bake version without egg and a bit of lemon juice that you just mix and put in the fridge to set? Your version looks great...I'm just having a nostalgia attack and remembering a home version made in the family. cheers.

        • Ahh Jann , l can't tell you how many gazillions of these I pumped out over my years of cooking, l'm having flashbacks!! The mini ones were the most popular , people would want them still warm out of the oven ! I have to have my baked cheesecakes cold ! I used to make up a Berry mix using frozen blackberries, raspberries and strawbs and blueberries.. put a good spoonful of sugar over them and zap it for a minute or 2 in the microwave. So they still hold the shape but are nice and glossy. Then when the cheesecake is just about ready , l put some of this in the middle and return to the oven for a few minutes more.Even fancier I would sometimes add some rosewater or rose syrup to the berries in summertime. Thanks for the reminder , it's pretty much the same as my filling too ;)

                                              • I add half satchets of lemon jelly and lime jelly in separate quarter cups of water (so it sets quicker), add them each to half the cream cheese. Put on base and swirl together. Do the same with boysenberry and raspberry jelly. Looks fancy.

                                            • Basque cheesecake is the best. This reminded me of it. I do not eat dairy at all as we ALL are lactose intolerant, even thoug you've been conditioned via wrong foods to ADAPT to being ABLE to ingest it...somewhat...lol...but even I will get a basque cheesecake once a year from the grocery store. I feel horrible the next day, but, nobody is perfect!
