Lemon Dijon Pepper Baked Salmon fillet
As a family, we have decided to have clean nutritional protein packed dinner once a week. This week I noticed Salmon fillets are on sale, so I guess delicious salmon is on the menu! This recipe uses minimal ingredients but is very flavorful, not to mention the nutritional value salmon brings.

Ingredients

2 Salmon fillets
1 lemon juice
1 Tbsp Dijon mustard
Salt and pepper
1 tsp Italian seasonings (optional)
1 Tbsp olive oil

Method:

1) Get a small bowl, mix the above ingredients together.

2) Pour them over the salmon fillets carefully.

3) Bake at 150 degrees for 10-15 mins. Take care not to overcook.

4) On this occasion, I serve the salmon fillets with leftover pasta and scrambled eggs.
