Ingredients:
500 grams of Chicken thigh (or other chicken)
one large onion
one large cucumber
powdered Chicken stock
salt and pepper
Oil (sesame is best other oil is fine)

Method:
Oil up a suitable baking tray
Chop up your chicken in chunks...lightly season it with salt and
pepper...a very light sprinkle of chicken stock

Slice up the onions in strips...peel the cucumber and cut it into
fine long strips

Put the chicken in the tray...cover it entirely with the onion and cucumber....and just bake it slowly on a low heat until baked through

Serve with rice..or a fresh salad...the oil in the cucumber is really good for the chicken!...please try...
