Carrot Loaf Recipe

I used what I have
Ingredients
1 cup grated carrot
1 cup all-purpose flour
½ cup sugar
1 egg
½ cup yogurt
¼ cup canola oil
1 tsp cinnamon
1 tsp baking powder
Pinch of salt

Method
1. Preheat oven to 170 180°C (350°F).
2. Grease a small pan or line with parchment.
3. In a bowl, whisk egg + sugar until light.
4. Add yogurt and oil, mix well.
5. Add grated carrot + cinnamon.
6. Add flour + baking soda + salt. Mix gently.
7. Pour into pan.
8. Bake 30 35 minutes, or until a toothpick comes out clean.
