| Easy, Delicious and Hearty 15 mins Soup | ||
This is a comforting soup yet loaded with beef, chicken and veggies. One of the best things about this recipe is its versatility! You can practically use any leftover food from your fridge. What a great way to use them all up yet creating a delicious and hearty meal. This recipe is ideal for the cooler season. Ingredients: Leftover beef stew Leftover chicken nuggets Fried eggplant Fried Asparagus Leftover Chinese cabbage Roast yams (sweet potatoes) Leftover Mushrooms Leftover Zucchini 1 cup Beef stock 1 cup water Salt and pepper to taste Method: 1) All of the above ingredients I have listed are cooked. If you don't have any cooked items in your fridge, you will need to cook them separately first. 2) Carefully pour in beef stock and water. Add in all the cooked ingredients. Add salt and pepper to taste. 3) Take care not to overcook as you don't want the cooked ingredients to become mushy! Turn off the heat as soon as it boils. 4) I serve this soup with bread rolls or garlic bread. | ||
