Chicken Pad Thai
This may seem like a lot of ingredients, but you will find that you already have most of them in your pantry.

250 g rice noodles.
100 gram chicken breast.
1 onion chopped.
1 carrot sliced.
Bell pepper strips, 3 colours if possible.
Garlic and ginger to own likes.
Tablespoon soy sauce.
Tablespoon fish sauce.
Sweet chili sauce to own taste.
2 tablespoon brown sugar.
2 tablespoon crushed peanuts.
Salt to own taste.
Red chili flakes to own desire. Omit if you do not like chili.

Fry ginger and garlic with a small amount of oil in a wok, thrown in carrots and onions. Then add bell peppers. Next add chopped chicken breast. Cook on low heat for 6 or 7 minutes.
Meanwhile boil noodles in water.
Add all other ingredients to the chicken mix. Fry for a couple of minutes.
Mix with noodles and serve.
I have cracked two eggs into a small jug whisked them together, then poured into fry pan to make the fried egg "mesh".
This is all very easy to throw together.
