Apple Crumble Cake

Ingredients:
- 3 large apples, peeled, cored, and sliced thinly
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup unsalted butter, chilled and cubed
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- Optional: 1/4 cup chopped walnuts
Directions:
Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish. In a large bowl, whisk together the flour, baking powder, cinnamon, and salt. In a separate bowl, beat the butter and sugar until light and fluffy, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined. Spread half of this batter into the prepared baking dish. Layer the apple slices evenly on top of the batter. Sprinkle the optional walnuts over the apples if desired. Crumble the remaining batter over the apples to create a rustic topping. Bake in the preheated oven for 40-45 minutes or until the crumble is golden brown and a toothpick inserted into the center comes out clean. Let it cool slightly before serving.

                                            • I have made a "quickie version" of this, just mix some breadcrumbs in melted butter, put in bottm of baking dish, place apple compote on top and spring with cinnomon and place in oven, ideal when already doing a roast and put it in when roast is done, makes for a nice desert dish. Probably do it during the winter days ahead.
