Comfort Chicken Stew
2 chicken breasts, cut into 1- inch pieces
2 carrots, chopped
1 onion, chopped
2 cups potatoes, peeled and cubed
1 cup frozen peas
4 cups chicken broth
2 tablespoons tomato paste
2 cloves garlic, minced
1 teaspoon thyme
1 teaspoon rosemary
1/2 teaspoon parsley
Salt to taste
Pepper to taste
Cornstarch optional

Place the chopped vegetables, chicken, minced garlic, tomato paste, thyme, rosemary, parsley, salt, pepper, into your slow cooker. Pour the chicken broth over the ingredients, ensuring that the chicken and vegetables are mostly submerged. Cover the slow cooker and cook on low for 8 hours
Stir in the frozen peas during the last 30 minutes.
Optional- if you want the liquid thickened take some out and thicken with Cornflour.
Mix back into the slow cooker
