Tasty Thai Red Curry Marinated Beef Roast

If you like rich, bold and tangy flavor, you should give this recipe a try! This marinade is flavorsome. You will be surprised with the result.
Ingredients:
1/3 cup Thai Red Curry paste
1/3 cup cooking oil ( I use olive oil)
2 tsp crushed garlic
2 tsp lemon or lime juice
2 tsp grated ginger
1 tsp sugar
Salt and pepper to taste
700 - 1000g Beef Roast
Method:
1) Get a medium bowl, mix the above ingredients together.
2) Carefully pour it over the beef roast.
3) Cover and I like to refrigerate the marinade beef overnight for maximum flavor.
4) The next day, transfer the marinade beef to a baking dish. Bake it at 130 degrees for 2 hours. I like to bake it slowly for maximum tenderness.
5) I then serve it with roast potatoes and seasonal vegetables. Enjoy!
