Fresh Salmon with Avocado and seaweeds on Rice
I have created this Japanese inspired recipe. It is different, refreshing and packed with omega 3 which your body needs. You can easily substitute what you have got in your fridge and pantry to complement this dish. It is also a great recipe to use up all the leftover ingredients in one go!

Ingredients

1 piece of cooked Salmon ( or Tuna if prefer)
1 cup of leftover cooked rice
1/3 cup corn
1/3 broad beans
Mayonnaise or salad dressing
1/2 Avocado
A handful of seaweeds (I got a small tub from sushi place in the mall)
Dash of lemon juice (optional)

Method:

1) I use the leftover rice from fridge. You can microwave for 1 minute if you prefer warm rice like me.

2) Dump corn, broad beans, seaweed and avocado on top of rice.

3) Cut salmon into small pieces, add it into the rice bowl.

4) Then squeeze in mayonnaise or salad dressing and lemon juice on top of everything! Enjoy.
