Chicken Vegetable Soup

Ingredients
* 1 chicken breast (cooked and shredded)
* 2 celery stalks, chopped
* 1 carrot, diced
* 1 handful spinach or leafy greens, chopped
* 4 cups chicken broth or water
* 1 small onion, chopped (optional)
* 2 cloves garlic, minced
* Salt and pepper to taste
* ½ tsp turmeric
Instructions
1. In a pot, saute onion and garlic for 2 3 minutes.
2. Add celery and carrots; cook for 3 4 minutes.
3. Pour in chicken broth or water and bring to a boil.
4. Add shredded chicken and turmeric.
5. Simmer for 15 20 minutes until vegetables are soft.
6. Add spinach or greens and cook for 2 more minutes.
7. Season with salt and pepper.
8. Serve warm.
