Sausage Potato Bake

1 lb Sausage cut up
1 1/2 lbs potatoes chopped
1 kumara chopped
1 Garlic crushed
1 Green capsicum diced
1 Onion, chopped
2 tbsp Parsley,
1 carrot chopped
1/2 tsp Thyme,
Black pepper
1 tsp Paprika,
Salt
2 tbsp Olive oil
1/2 cup grated cheese

Preheat oven to 200°C

In a fry pan cook together the sausages, onion and garlic on olive oil. Add in the capsicum, salt and pepper.
When the oven is preheated place the kumara, potatoes and carrots in for 30 to 45 mins.

Once that's done place in a large bowl and add the sausage mix and place all the herbs/spices salt and pepper in and mix through. Finally mix in the cheese and enjoy.

  • It sounds good have to take some things out but the language translation was the best kumara is known here as sweet potato and green capsicum is green bell pepper. I also love to learn what people called things in their home land

                                          • I have my own recipe handed down from Grandma, to mum to me using Polish sausage. I peel the potatoes and steam cook them whole, hard boil 4 eggs, slice up the polish sausage and the cooled down potatoes and place them one layer at a time staritng with the potatoes, sausag and eggs with the potatoes as th e top layer and brush with butter and bake,. Can use cream on top when it's almost ready to take out from the oven. The grated cheese sounds like a very good idea.

                                                    • I will substitute one pound of tempeth cut up for one pound of sausage cut up. I will substitute sweet paprika for paprika.
