Lemon Tomato Chicken on Rice Vermicelli
1 cup lemon juice
2 tablespoons olive oil
1 cup cooked shredded chicken
1 tablespoon apple cider vinegar
1 tsp mixed herbs
1 can chopped tomatoes
1/2 teaspoon salt
Pepper to taste
1/2 pack rice vermicelli
Grated cheese

Heat oil in pan on medium heat.
Add the shredded chicken and cook for 1 minute. Add in the lemon, vinegar, herbs, salt and pepper. Give a good stir. Stir in the tomatoes and let simmer.

Place the rice vermicelli in cols water for 2 minutes and drain. In a large pot boil water and place rice vermicelli in and let boil for 2 minutes.
Serve with chicken mixture and grated cheese on top.
