Easy Cheesy Potatoes and Vegetables Casserole
One of the great things about this recipe is its versatility. You can use whatever you have got in your fridge and pantry, especially wanting to use up leftover vegetables, this recipe is ideal for that purpose, yet tastes so good!!!!

Ingredients:

8-10 medium potatoes (peeled and sliced)
4-6 Zucchini
1/2 Chinese cabbage
6 eggs (boiled and sliced)
250g cream cheese
2 cups milk
100g Tasty cheese (or cheese of your choice)
Salt and pepper to taste
Dash of oil

Method:

1) Peel and slice potatoes, place them in a large pot filled with water. Boiled till soft. Set aside.

2) Boil eggs and sliced, then set aside.

3) Chop and fry Zucchini in oil till lightly brown, set aside. Repeat the same process on Chinese cabbage, set aside.

4) Layer potatoes, Zucchini, Chinese cabbage and eggs in a large casserole dish until all ingredients are used up.

5) Melt cream cheese and add milk in a pan. Then carefully pour them into the casserole.

6) Pop the casserole dish into the oven at 150 degrees for 1 hour or until bubbling. Chop tasty cheese and sprinkle them on top. Grill until golden. Enjoy!
