Tomatoes Pickle

Ingredients:
* 4 medium tomatoes
* 2 3 dried red chilies (or 2 fresh green chilies)
* 3 4 cloves garlic
* 1-inch piece ginger
* 1 tbsp roasted sesame seeds (optional)
* 1 tsp cumin seeds
* 1 tbsp mustard oil
* Salt to taste
* 1 tbsp chopped cilantro (optional)
* 1 2 tsp lemon juice (if needed)
Instructions:
1. Roast the tomatoes over a flame or boil them until soft. Peel the skin if desired.
2. Roast the dried chilies, garlic, ginger, and cumin seeds for 1 2 minutes.
3. Blend the tomatoes, roasted chilies, garlic, ginger, sesame seeds, cumin, and salt until smooth or slightly chunky.
4. Heat the mustard oil until it just starts to smoke, then let it cool slightly. Pour it over the paste and mix well.
5. Add chopped cilantro and lemon juice if you like. Taste and adjust the salt.
