Fruit but I found an Urban Peasant recipe that uses marmalade or jam or jelly and it is made in a microwave in minutes.

I was thinking more of putting in an extract like lemon or vanilla. Just a thought.

All of them on top definitely in the raw cake batter… some might work others might prevent the sponge from rising correctly.

The fruit will just melt into big mushy colors and no one will know what it is. Just add pretty color dots (sprinkles) and voila', perfection.

As Linda says, just jam & cream in the middle. Plus a dusting of icing sugar on top.

I have often made cake and added fruit. Apple and cinnamon, it's delicious.

The question should have "what would you put on it." none of these ingredients would be suitable to put IN a sponge
